At Agave Azul we spoke with General Manager Ricky Palomar, and he told us a little secret too keeping Fresh Guacamole from browning. Olive oil! slows down the oxidation process in the avocado. It will not last over night but if you are having a party and want to put Guacamole out as a platter this will keep it looking fresh and appetizing. If you like spicy! Palomar says DO NOT add hot sauce, use jalapeno or another pepper of your choice.

3 Ripe Hass avocados
1 Freshly squeezed lime juice
1 tsp of olive oil
3/4 cup small-diced red onion
1 medium tomato, seeded, and small-diced
1/4 cup of chopped fresh cilantro
1/2 Jalapeno (If you want to add a little heat)
Kosher salt and freshly ground black pepper to taste

Vanilla Mascarpone Whipped Cream
8 oz Organic Mascarpone Cheese (room temp)
6 oz Organic Heavy Cream (cold)
2 1/2 Tbs Powdered Sugar (Optional)
1/4 tsp Mannix double strength Vanilla
1/2 tsp Mannix Organic ground Vanilla powder
In a chilled bowl add all ingredients, with a mixer of your choice, mix all ingredients. Start of with a low-speed, and as it starts to thicken increase speed slightly. Mascarpone is a sweet cheese so it will be creamier and a bit thicker, than regular whipped cream. For a lighter, silky texture add a little more heavy cream.
